I am generally inclined towards experimenting with unconventional edible plants. The hostas, for instance, have been tested, or at least tasted, extensively. And yet, every spring I pull the dahlias from storage in the basement and put the entire mass of tubers into the soil. The benefit is a continuous supply of palm to entire-hand-sized flowers from late summer to the first hard frost. Flowers that are basically pure joy in color, form, and abundance. But I’ve always wondered what those tubers taste like baked up, whether they impart a sense of September sunshine and October rain. Perhaps in 2025 I’ll finally find out.
